Ingredients

The ingredients are:
  • 4 ounces fresh soba noodles (uncooked, whole wheat spaghetti or rice vermicelli)
  • 6 cups low-sodium beef broth
  • 3 tablespoons hoisin sauce
  • 1 tablespoons low-sodium soy sauce
  • 1 tablespoons grated fresh ginger
  • 1 tablespoons sesame oil
  • 1 tablespoon freshly squeezed lime juice
  • 12 ounces beef tenderloin (or flank steak, thinly sliced, partially frozen to make slicing easier)
  • 3 cups spinach, chopped (fresh spinach, or thinly sliced bok choy)
  • 2 teaspoons five spice powder
  • 1/2 to 1 teaspoon hot sauce (Sriracha, or hot sauce of your choice)
  • 1/3 cup chopped green onions
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh basil leaves
  • Salt & pepper to taste
  • 100 grams bean sprouts (1 cup)
  • Lime juice (garnish)
  • Sesame seeds (garnish)

How to Make

  • Step 1: Cook noodles according to package instructions.

  • Step 2: Drain well, rinse with cold water and drain again.

  • Step 3: Set aside until soup is ready to serve.

  • Step 4: In a large pot, combine beef broth, hoisin sauce, soy sauce, ginger, sesame oil and lime juice.

  • Step 5: Bring to a boil.

  • Step 6: Reduce heat to low and simmer 3 minutes.

  • Step 7: Add beef, spinach, 5-spice powder, sriracha, green onions, mint and basil.

  • Step 8: Simmer for 3-5 more minutes, just until beef is just cooked through.

  • Step 9: Taste soup and add salt & pepper, if desired.

  • Step 10: To serve soup, place some cooked noodles in the bottom of a soup bowl.

  • Step 11: Top with a few bean sprouts, and ladle hot soup over top; drizzle lime juice and sprinkle with sesame seeds.

  • Step 12: Serve immediately.
