Step 1: Place the white sugar and brown sugar into a heavy saucepan.
Step 2: Pour the water into the centre, then make a large X across the sugar with your fingertip to let the water seep through.
Step 3: NOTE ~ Do not stir.
Step 4: Turn up the heat to medium-high and bring to a boil. Without stirring, boil for 8 minutes.
Step 5: Remove caramel from heat and once cooled, beat in yoghurt and vanilla extract.
