  • 1 medium zucchini, sliced 3/4 inch thick
  • 8 ounces whole button mushrooms
  • 1 large sweet onion, peeled and quartered
  • 1/2 pound baby carrots, cut in half lengthwise
  • 1 medium green bell pepper, seeded and cut into 1-inch chunks
  • 1 medium red bell pepper, seeded and cut into 1-inch chunks
