  • 1/2 cup chopped pecans
  • 2 tablespoons all-purpose flour
  • 2 tablespoons melted butter (or margarine, melted)
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup shortening
  • 1/2 cup milk
  • 1 large egg (beaten)

How to Make

  • Step 1: Combine the first five ingredients in a small bowl; stir well, and set aside.

  • Step 2: Combine 1 1/2 cups flour, baking powder, salt, and 1/2 cup sugar in a large bowl; stir well. Cut in the shortening with a pastry blender until the mixture resembles coarse meal.

  • Step 3: Combine the milk and egg; add to the flour mixture, stirring just until the dry ingredients are moistened.

  • Step 4: Spoon 1 tablespoon batter into paper-lined muffin pans; sprinkle with 1 tablespoon reserv ed brown sugar mixture. Top with remaining batter; sprinkle with the remaining brown sugar mixture.

  • Step 5: Bake at 375 degrees for 20 to 25 minutes or until a wooden pick inserted in the center comes out clean.
