The ingredients are:
  • Olive oil spray (spray of)
  • 4 large eggs
  • 1/2 teaspoon chili flakes (optional)
  • 3 tablespoons milk
  • 2 tablespoons sour cream (or cottage cheese)
  • 1 tablespoon all-purpose flour
  • 3/4 cup smoked chorizo sausage (sliced, casing removed)
  • 3 green onions, chopped
  • 3 tablespoons raisins (thompson raisins, soaked in hot water 10 minutes)
  • 1/2 cup salsa
  • Season with salt & pepper

How to Make

  • Step 1: Lightly spray a large skillet with oil.

  • Step 2: Over medium high heat fry the green onion & Chorizo 3 minutes.

  • Step 3: Whip together the eggs,milk, chili flakes, sour cream (cottage cheese) and flour..Pour into the skillet.

  • Step 4: Sprinkle in the raisins.

  • Step 5: Let the eggs begin to settle.

  • Step 6: With a spatula roll the eggs to form lovely curds.

  • Step 7: Continue doing this until the eggsare fully cooked.

  • Step 8: Season with salt & Pepper.

  • Step 9: Seerve with some salsa on top.
