  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 yellow onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup dry rice (regular)
  • 1 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1 can (14 1/2 ounce) chicken broth
  • 1 avocado

How to Make

  • Step 1: Place butter and oil in 2 qt pan over medium heat.

  • Step 2: When butter is melted, add onion and garlic; cook until onion is tender.

  • Step 3: Add rice, cook, stirring constantly, 3 minutes or until rice looks milky and opaque.

  • Step 4: Add salt, oregano, cumin, turmeric and broth; bring to a boil.

  • Step 5: Cover; reduce heat and simmer 20-25 minutes or until rice is tender and all liquid is absorbed.

  • Step 6: Peel and pit avocado, the dice.

  • Step 7: Fluff up rice with fork; add avocado and toss gently.

  • Step 8: Turn off heat, then allow to stand 5 minutes before serving.
