Step 1: Spread each 1/2 muffin with pizza sauce or salsa.
Step 2: In a large lightly oiled skillet fry the mushrooms, onion and pepper for 2 minutes. Season with pepper.
Step 3: Whisk the eggs with milk.
Step 4: Pour eggs into skillet with the onions and mushrooms, medium high heat.
Step 5: Let the eggs start to settle then gently turn the eggs to form large curds.
Step 6: Cook until the eggs are all cooked and no moisture remains.
Step 7: Spoon the eggs onto the pizza sauce covered muffin halves, top with pepperoni & cheese.
Step 8: Serve one or two halves per person.
