Ingredients

The ingredients are:
  • 6 cups lettuce, chopped (romaine lettuce)
  • 1/2 to 3/4 pound boneless skinless chicken breasts (2-3 breasts, grilled, then sliced thinly)
  • 1 cup corn (well drained if using canned, I prefer corn off the cob)
  • 1 tomato, diced
  • 3/4 cup black beans (drained and rinsed)
  • Red onion, sliced
  • Cheddar cheese, cubed
  • Monterey Jack cheese, cubed
  • 1/4 cup barbecue sauce
  • 1/4 cup ranch salad dressing
  • Tortilla chips, coarsely crushed
  • Salt and black pepper, to taste

How to Make

  • Step 1: In a VERY large salad bowl, place romaine, top with chicken, corn, tomato, onion, beans and cheeses.

  • Step 3: Serve right away, topped with crushed tortilla chips.
