  • 1 1/4 pounds cucumber (2 large, peeled, thinly sliced)
  • 1 small yellow onion, peeled, thinly sliced
  • 12 ounces tomatoes (3 small Roma, thinly sliced)
  • FOR DRESSING
  • 1/3 cup low-fat sour cream
  • 1/4 teaspoon Dijon mustard
  • 1 tablespoon white vinegar
  • 2 tablespoons milk (can use low-fat)
  • 1/2 to 3/4 teaspoon granulated sugar, to taste
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt, to taste

How to Make

  • Step 1: Place the cucumbers, onions and tomatoes in a large bowl. Set aside.
