Ingredients

The ingredients are:
  • 2 1/2 pounds butternut squash (1 medium, peeled cut into 1 1/2" chunks, apprx 6 cups)
  • 1 tablespoon butter (or margarine)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup orange juice (fresh, use pulp too)

How to Make

  • Step 1: Place your prepared squash in one layer in a lightly sprayed with oil, ovenproof dish. Sprinkle on the cinnamon & nutmeg.

  • Step 2: Cut the butter in bits and place on top.

  • Step 3: Bake covered in 375 oven for 25 minutes..Uncover & pour in the orange juice.

  • Step 4: Continue cooking uncovered for another 35 minutes or until the squash is soft and most of the juice has been absorbed/evaporated.
