Ingredients

The ingredients are:
  • 14 ounces navy beans (2 cups dry, soaked overnight)
  • 4 ounces bacon (4 strips, minced)
  • 9 ounces carrots (3 carrots, minced)
  • 3 celery stalks, minced
  • 1 yellow onion, minced
  • 1/2 teaspoon thyme
  • 2 cloves garlic, minced
  • 4 ounces tomato paste
  • Red pepper flakes, 1 dash
  • 2 cups water, more if needed
  • 2 cups ham stock
  • 1 tablespoon wine vinegar
  • Liquid smoke, 3 drops
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • Garnish
  • 2 ounces bacon (2 strips crispy fried bacon, minced)

How to Make

  • Step 1: Soak beans overnight and discard water.

  • Step 2: Place all ingredients except wine vinegar, salt and pepper in a crockpot.

  • Step 3: Simmer until beans are tender, cooking 6 hours low

  • Step 4: Puree 2 cups of soup and return to pot.

  • Step 5: Add wine vinegar and liquid smoke, mix well.

  • Step 6: Salt and pepper to taste.

  • Step 7: Garnish with bacon
