Ingredients

The ingredients are:
  • 2 tablespoons fish sauce
  • 1 1/2 tablespoons lime juice
  • 2 teaspoons honey
  • 3 shallots (i chopped and 2 sliced)
  • 1 clove garlic, chopped
  • 1 red Thai chile, stemmed
  • 2 tablespoons oil (canola oil)
  • 12 ounces watermelon (cut into rectangles, 2 1/2 x 1 1/2 inches)
  • 1/4 cup feta, crumbled
  • 12 ounces tomatoes (2 tomatoes, cored and quartered)
  • 1 jalapeno pepper, stemmed and sliced
  • Kosher salt
  • Pepper
  • 1/4 cup mint leaves
  • 1/4 cup basil leaves, torn
  • 3 scallions, sliced

How to Make

  • Step 1: In a blender puree the first 3 ingredients plus the chopped shallot, garlic and chile until smooth. With the blender still running drizzle in the oil.

  • Step 2: In a large bowl toss the dressing with the next three ingredients (- jalapeno); transfer to a platter and garnish with sliced shallots, herbs and scallions.
