  • 5 pounds squash (2 medium butternut squash)
  • 1/2 cup butter (melted and cooled)
  • 1/4 cup brown sugar (light brown sugar, packed)
  • 1 teaspoon salt
  • 1/2 to 1 teaspoon fresh ground black pepper

How to Make

  • Step 1: Preheat the oven to 400 degrees F, then grease a baking sheet.

  • Step 2: Peel the squash and cut in half lengthwise.

  • Step 3: Using a spoon scrape out all the seeds.

  • Step 4: Slice the squash into about 1-1/2-inch cubes (try to get all the cubes to the same size) place them into a medium bowl.

  • Step 5: Add the melted butter, brown sugar, salt and pepper; using clean hands toss to coat.

  • Step 6: Spread out in a single layer on the baking sheet.

  • Step 7: Bake for 45 minutes to 55 minutes, until the squash is tender and the glaze begins to caramelize (turning the squash a few times during baking and season with more salt and pepper if needed).
