Step 1: In a small frying pan, heat mirin and sake and bring to a boil.
Step 2: Add dashi, soya sauce and sugar, bring to a boil.
Step 3: Add onions, cook till soften, about 2 mins.
Step 4: Add chicken meat, leave to simmer until the chicken is cooked.
Step 5: Toss in the spring onions.
Step 6: Drizzle in the eggs, do not stir. Turn off the heat once the eggs is almost set.
Step 7: Place rice in a large serving bowl. Pour chicken and egg mixture over the rice.
