Ingredients

The ingredients are:
  • 8 ears corn, kernels removed
  • 1 medium onion, fine diced
  • 1 garlic clove, minced
  • 1 teaspoon fresh lime juice
  • 1/2 cup heavy cream
  • 1/2 cup pepper jack cheese
  • 1 tablespoon butter
  • 1 tablespoon fresh cilantro, minced fine
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Base ... In a medium size saute pan, add the butter and bring to medium high heat. Add the onion and garlic and cook 1-2 minutes, then add in the corn and reduce to medium heat. Add in the corn and continue to cook 5 minutes until the corn is tender. Add in the cream and season with salt and pepper. Continue to cook on medium - medium low heat and let it simmer until the cream reduces and thickens, about 10-12 minutes.

  • Step 2: Finish ... Add in the cheese, cilantro and lime juice and mix well. Simmer until the cheese begins to soften.

  • Step 3: Serve ... ENJOY! with your favorite dish.
