Ingredients

The ingredients are:
  • 1 cup unsalted butter (room temperature)
  • 2 teaspoons paprika (hot smoked paprika, or use 4 teaspoons canned chipotle chiles in adobo sauce, chopped)
  • 1 garlic clove, chopped
  • 1/2 teaspoon granulated sugar
  • Salt, pinch
  • 20 corn cobs (20 ears of corn, shucked)

How to Make

  • Step 1: In a food processor or blender blend the first 5 ingredients (butter - salt) until smooth. Wrap the butter in plastic forming a 1 1/2 diameter log and then refrigerate until cold (2 hours or up to one day).

  • Step 2: Prepare grill to medium high heat.

  • Step 3: Working in batches cook corn in a large pot of boiling water until tender (5 minutes); drain.

  • Step 4: Grill corn for 5 minutes, turning occasionally.

  • Step 5: Serve corn with thick slices of the butter.
