Ingredients

The ingredients are:
  • 5 pounds potatoes (6 c white potatoes, 10 large)
  • 3 large eggs (boiled)
  • 5 green onions, chopped
  • 3 celery ribs, chopped
  • 1/2 cup white onion, chopped
  • 1/2 cup bread and butter pickles, chopped
  • 1/2 cup sliced black olives
  • 1 teaspoon prepared mustard
  • 1/4 cup rice vinegar
  • 1 1/2 cup mayonnaise
  • Optional:
  • 1/4 cup bacon bits
  • 1/4 cup shredded cheddar cheese (aged cheddar or sharp cheddar)

How to Make

  • Step 1: Boil potatoes until tender, drain then chop into small squares.

  • Step 2: Boil eggs until firm, can be chopped or sliced.

  • Step 3: Chop all remaining ingredients then put into large mixing bowl.

  • Step 4: Add mustard, vinegar mayonnaise and salt and pepper, mix well then cool in refrigerator until ready to serve.
