Ingredients

The ingredients are:
  • 12 ounces fresh raspberries, rinsed and dry
  • 4 teaspoons chipotles in adobo, minced fine
  • 2 large jalapenos, fine minced (seeded and ribs removed)
  • 2 cloves garlic, minced fine
  • 1 small shallot, minced fine
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup cider vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

How to Make

  • Step 1: Base ... In a small pot, add the olive oil and bring to medium heat. Add the garlic, shallot, and jalapenos and saute until they are slightly tender, about 2 minutes. Then add in the chipotles and raspberries and cook 2-3 minutes until the raspberries begin to break down.

  • Step 2: Finish ... Add in the sugars, vinegar and salt and simmer are medium low heat for approximately 5 minutes until the sauce begins to thicken. Remove from the heat and let cool before using. Will last 4-5 days in the refrigerator.

  • Step 3: Serve ... As I said, this is wonderful on chicken, pork or steak. Chicken breasts and pork chops are my favorite. ENJOY!
