Step 1: In heavy saucepan, add: 5 cups apples, sliced and diced, 1/2 c brown sugar, 1/2 tsp spices and 1/2 cup water; bring to boil, lower heat, and simmer for 15-20 minutes or until thickened. Bring down to room temp or refrigerate until ready to use.
Step 2: Heat skillet with oil.
Step 3: In a bowl, combine eggs, flour, cheese, and onions. Add potato and season.
Step 4: Add 1/4 cup latka batter at a time to hot skillet and cook until brown on both sides. Drain on paper towels.
Step 5: Keep warm, serve with applesauce.
