Ingredients

The ingredients are:
  • 1/4 cup oil (canola oil)
  • LATKES
  • 2 cups potatoes, grated
  • 5 large eggs
  • 1/2 cup all-purpose flour
  • 1 cup ricotta cheese
  • 1/2 cup chopped yellow onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • APPLESAUCE
  • 1 3/4 to 2 pounds apples (5 large, peeled and diced)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg,
  • 1/8 teaspoon allspice,
  • 1/8 teaspoon cardamom,
  • 1/2 cup water

How to Make

  • Step 1: In heavy saucepan, add: 5 cups apples, sliced and diced, 1/2 c brown sugar, 1/2 tsp spices and 1/2 cup water; bring to boil, lower heat, and simmer for 15-20 minutes or until thickened. Bring down to room temp or refrigerate until ready to use.

  • Step 2: Heat skillet with oil.

  • Step 3: In a bowl, combine eggs, flour, cheese, and onions. Add potato and season.

  • Step 4: Add 1/4 cup latka batter at a time to hot skillet and cook until brown on both sides. Drain on paper towels.

  • Step 5: Keep warm, serve with applesauce.
