Ingredients

The ingredients are:
  • 14 ounces sliced olives (2 cups olives, finely chopped pitted, black and green)
  • 1/2 cup olive oil, divided
  • 1 cup chopped yellow onion
  • 2 tablespoons chopped garlic
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 2 large eggs (beaten)
  • 1 to 2 tablespoon water, if needed
  • 1/4 cup sour cream

How to Make

  • Step 1: Put the olives in a food processor and chop. squeeze out as much moisture as possible, then set aside.

  • Step 2: Heat 1/4 cup of olive oil in a skillet and saute onions and garlic until golden. Add to olives.

  • Step 3: Mix the flour, baking powder, baking soda, salt and cumin in a bowl. Add beaten eggs and olive-onion mixture (add water if batter is too thick).

  • Step 4: Heat 1/4 cup of olive oil in skillet, add batter by ladlefuls, and cook 4 at a time for 3-4 minutes per side. Remove, keep warm, and cook additional latkes.

  • Step 5: Garnish with sour cream.
