Ingredients

The ingredients are:
  • 12 ounces bacon (12 slices, chopped)
  • 3 cups yellow onions, chopped
  • 6 garlic cloves, chopped
  • 3 cans (15 ounce) diced tomatoes (fire-roasted)
  • 1/2 teaspoon ground allspice
  • 6 cans (15 ounce each) pinto beans (undrained)
  • 6 pickled jalapeno chilies, seeded and diced
  • 1/4 cup cilantro, chopped

How to Make

  • Step 1: In a large pot sauce the bacon over medium high heat until crisp; drain on paper towels. Pour off all but 6 tablespoons of the drippings.

  • Step 2: Add onions and garlic; sauce until they begin to brown (10-15 minutes); stir in tomatoes and allspice; simmer for 15 minutes or until mixture thickens.

  • Step 3: Stir in beans, jalapeños and bacon; simmer for another 20 minutes; stirring occasionally.

  • Step 4: Season with salt and pepper.

  • Step 5: Stir in cilantro and transfer to serving bowl.
