The ingredients are:
  • 12 ounces bell peppers (2 peppers, cut into chunks or 4 cups baby peppers in associated colors)
  • 1/2 cup olive oil
  • 3 garlic cloves, crushed
  • 1 teaspoon lemon rind, grated
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 3 ounces mozzarella (fresh baby balls)
  • 1/4 cup basil leaves
  • 1 teaspoon lemon juice

How to Make

  • Step 1: Preheat broiler to high.

  • Step 2: Arrange peppers in a single layer on a foil lined jelly-roll pan; broil for 4-5 minutes per side or until blackened and tender. Cool.

  • Step 3: Combine peppers and next six ingredients (-mozzarella balls); toss. Cover and refrigerate overnight, tossing occasionally. Let stand at room temperature for 30 minutes.

  • Step 4: Stir in basil and lemon juice.

  • Step 5: Serve with a slotted spoon or over lettuce.
