  • 1 box (6 ounce) Jell-O gelatin (lemon)
  • 1/4 cup granulated sugar
  • 2 1/2 cups water (boiling)
  • 1 cup heavy cream (whipping cream)

How to Make

  • Step 1: Drain apricots, reserving 1-1/2 cups liquid.

  • Step 2: Puree apricots in a blender.

  • Step 3: Dissolve Jell-O and sugar in boiling water.

  • Step 4: Stir in reserved apricot syrup.

  • Step 5: Chill until cooled.

  • Step 6: Blend in apricots and chill until slightly thickened.

  • Step 7: Fold in whipped cream.

  • Step 8: Put in pan and chill.
