Ingredients

The ingredients are:
  • 16 ounces dry rice (2 cups, dry)
  • 2 cups water
  • 1 pound chicken liver
  • 5 tablespoons butter
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon red chili pepper, minced
  • 1/8 teaspoon allspice
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 ounces green peas (1 cup)
  • 1 cup baby spinach, chopped
  • 6 green onions, chopped
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon parsley, chopped
  • 2 tablespoons pine nuts

How to Make

  • Step 1: Melt 3 tablespoons butter. Add in onion and garlic; saute.

  • Step 2: Dash a little allspice and cinnamon on liver let marinade.

  • Step 3: Add rest of spices to onion add chili, let sweat.

  • Step 4: Wash rice then drain, add to onion then stir so all gets coated.

  • Step 5: Add salt and pepper

  • Step 6: Add water bring to a boil, cover then simmer 15 minutes.

  • Step 7: In saute pan, add butter then liver. Brown them then remove.

  • Step 8: Then saute peas and spinach add to rice when wilted.

  • Step 9: Saute pine nuts. Add to rice add herbs, cover for 5 minutes.

  • Step 10: Plate top with liver.
