Step 1: Combine mince, garam masala and ginger in a bowl and then shape into 16 meatballs.
Step 2: Heat a frying pan over high heat and spray meatballs with oil, cook and turn for 4 minutes or until browned all over.
Step 3: Transfer to a heatpropf plate.
Step 4: Add onion and garlic to pan and cook and stir for 2 minutes and then add curry paste, cook and stir for 1 minute and then stir in coconut milk.
Step 5: Return meatballs to pan and add tomato and potato and bring to the boil and then reduce heat and simmer for 8 minutes.
Step 6: Stir through half the spinach and then serve with remaining spinach and rice.
