Ingredients

The ingredients are:
  • 500 grams ground beef (beef mince, I use extra lean)
  • 2 teaspoons garam masala]
  • 1 teaspoon giner (minced)
  • Cooking oil to spray
  • 1 yellow onion (chopped I do chunky chop)
  • 1 garlic clove (minced)
  • 1/4 cup curry paste (rogan josh curry paste)
  • 270 ml coconut milk (light, canned)
  • 12 ounces tomatoes (2 tomatoes, chopped)
  • 1 large potato (all-rounder such as desiree coassely chopped)
  • 50 grams baby spinach leaves
  • 3 cups cooked rice

How to Make

  • Step 1: Combine mince, garam masala and ginger in a bowl and then shape into 16 meatballs.

  • Step 2: Heat a frying pan over high heat and spray meatballs with oil, cook and turn for 4 minutes or until browned all over.

  • Step 3: Transfer to a heatpropf plate.

  • Step 4: Add onion and garlic to pan and cook and stir for 2 minutes and then add curry paste, cook and stir for 1 minute and then stir in coconut milk.

  • Step 5: Return meatballs to pan and add tomato and potato and bring to the boil and then reduce heat and simmer for 8 minutes.

  • Step 6: Stir through half the spinach and then serve with remaining spinach and rice.
