  • 2 cups mashed potatoes
  • 1 1/2 cups panko breadcrumbs (or plain breadcrumbs)
  • 1/3 cup sliced scallion
  • 1/3 cup chopped red bell pepper
  • 3 tablespoons parsley
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs (beaten)
  • 1 1/2 pounds cod fish fillets (cooked)
  • 1 garlic clove, minced
  • 2 tablespoons oil, divided
  • Cooking spray

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Make the sauce by mixing all the ingredients and refrigerate.

  • Step 3: Add all potato ingredients and shape into 12 patties.

  • Step 4: Add 1 tbsp oil to skillet and add 6 patties, cook 2 minutes on each side.

  • Step 5: Spray a baking sheet with cooking spray and add cooked patties.

  • Step 6: Repeat, then add 12 patties to oven, bake for 10 minutes and serve with sauce.
