  • 3 tablespoons bacon fat
  • 2 tablespoons all-purpose flour
  • 2 3/4 cups brown stock
  • 1/4 cup cider
  • 5 cloves
  • 2 sprigs parsley
  • 2 teaspoons tomato puree

How to Make

  • Step 1: Brown onion in bacon grease until golden brown. Add in the flour, stir to brown it.

  • Step 2: Add cider and beef stock gradually; cook until slightly thickened.

  • Step 3: Add in the cloves, parsley and tomato puree; cook by gently simmering until reduced to 2 cups. strain season with salt and pepper.
