Step 1: Mix together the flour, eggs, salt and water.
Step 2: Knead dough until smooth.
Step 3: Let rest, covered, about 19 minutes.
Step 4: Roll thin.
Step 5: Roll up as for a jelly roll, or cut into strips. (Cut as narrow as possible or into SMALL squares).
Step 6: Dry noodles then cook the same as you would regular noodles.
