Ingredients

The ingredients are:
  • 2 envelopes (1/4 ounce) unflavored gelatin
  • 1/2 cup cold water
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 can (6 ounce) frozen orange juice concentrate
  • 1 teaspoon orange zest
  • 3 cups cottage cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1/2 cup graham cracker crumbs
  • 2 ounces candied cherries (10 cherries)
  • 1/2 cup mandarin orange

How to Make

  • Step 1: Soften 2 envelopes knox gelatin in water.

  • Step 2: Mix 3/4 cup sugar and salt in double boiler. add thawed oj.

  • Step 3: And egg yolks, cook over boiling water, stirring consantly until slightly thickened about 10 minutes. remove from heat add softened know and finely grated orange zest..cool.

  • Step 4: Stir in sieved cottage cheese ( i think you can use food processer here).

  • Step 5: Chill stirring occasionally until mixture mounds slightly when dropped from a spoon.

  • Step 6: Beat egg whites until stiff.

  • Step 7: Gradually beat in 1/4 cup sugar.

  • Step 8: Beat heavy cream until whipped.

  • Step 9: Fold in whipped cream to orange mixture.

  • Step 10: Then fold in beaten egg whites.

  • Step 11: Turn into 8 inch spring form pan.

  • Step 12: Combine melted butter and graham crackers.

  • Step 13: Sprinkle over middle of top of cake.

  • Step 14: Chill 6 hours.

  • Step 15: Plate.

  • Step 16: Put one canned orange slice at bottom then a marachino cherry then orange slice all round bottom.

  • Step 17: On top fan 3 sets of three orange slices around top with 1 marachino cherry at top of each 3 slices.
