Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 green onion ,chopped
  • 3 cups beets, chopped (canned)
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 16 ounces dry bowtie pasta (cooked and drained)
  • 8 ounces sour cream
  • 6 tablespoons fresh Italian parsley, chopped

How to Make

  • Step 1: Melt butter with oil in large nonstick skillet over medium heat.

  • Step 2: Add garlic, green onion and stir until pale golden, about one minute.

  • Step 3: Add beets and pepper; reduce heat to medium low and saute.

  • Step 4: Stir in lemon juice, add pasta.

  • Step 5: Stir in sour cream and 4 tbsp parsley.

  • Step 6: Season with salt and pepper.

  • Step 7: Serve with additional parsley on top.
