Step 1: Preheat oven to 350 degrees.
Step 2: Beat softened butter until creamy, then slowly add sugar, vanilla and amaretto until you have a thick batter.
Step 3: Add the egg and beat on high for about half a minute.
Step 4: Mix rice flour with corn starch
Step 5: And baking powder, then stir in the almond flour.
Step 6: Stir flour mix into butter mix until well combined.
Step 7: With two teaspoons drop small heaps onto parchment lined cookie sheet.
Step 8: Bake cookies about 12 minutes.
