  • 2 large eggs (well beaten)
  • 2/3 cup all-purpose flour (sifted)
  • 1 teaspoon salt
  • 4 teaspoons baking powder

How to Make

  • Step 1: Preheat your griddle.

  • Step 2: Pour the boiling water over the cornmeal and mix well, then let cool slightly, about 10 minutes

  • Step 3: Add the melted butter, milk, molasses and eggs and mix thoroughly.

  • Step 4: Sift the flour, salt and baking powder together and stir into the cornmeal mixture quickly.

  • Step 5: Drop by spoonful on the hot griddle.

  • Step 6: Brown on one side, then turn and brown the other side.
