Ingredients

The ingredients are:
  • 1 (4 pound) whole chicken (broiler-fryer, cup up)
  • 3 quarts water
  • 3 carrots,scraped and cut into 1 inch pieces
  • 2 stalks celery, cut into 1 inch pieces
  • 2 green onions, cut into 1 inch pieces
  • 1 yellow onion, peeled and quartered
  • 1 parsnip, scraped and cut into 1 inch pieces
  • 8 fresh dillweed sprigs
  • 2 fresh parsley sprigs
  • 1 small bay leaf
  • 1 tablespoon salt
  • 1/4 teaspoon black pepper
  • Garnish: chopped fresh parsley

How to Make

  • Step 1: Combine chicken and water in alarge Dutch oven; bring to a boil. Skim the foam off the top and discard it.

  • Step 2: Add carrots and remaining ingredients except chopped parsley; cover, reduce heat and simmer for 3 hours. Remove chicken and discard the skin from the chicken. Bone chicken and cut the meat into pieces.

  • Step 3: Strain the chicken broth reserving carrots, celery, onion, and parsnip; return the chicken and vegetables to the broth.

  • Step 4: Garnish if desired.
