The ingredients are:
  • 12 ounces dry split green peas (1 1/2 cups dry quick-cooking)
  • 1 ham bone
  • 2/3 cups coarsely chopped yellow onion
  • 1/4 cup chopped carrot (cut-up)
  • 1/2 cup coarsely chopped celery
  • 2 parsley sprigs
  • 1 clove garlic
  • 1 bay leaf
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon dried thyme leaves
  • 1/8 teaspoon pepper
  • 2 cans (14 ounce) chicken broth (clear)
  • 1 cup chopped ham (cooked, slivered)

How to Make

  • Step 1: 1. In 3-1/2-quart kettle, combine peas and 1 quart water;

  • Step 2: Bring to boiling.

  • Step 3: Reduce heat;

  • Step 4: Simmer, covered, 45 minutes.

  • Step 5: Add more water if necessary.

  • Step 6: 2. Add ham bone and rest of ingredients, except ham;

  • Step 7: Simmer, covered, 1-1/2 hours.

  • Step 8: 3. Remove ham bone,

  • Step 9: And discard.

  • Step 10: 4. Press vegetables and liquid through coarse sieve.

  • Step 11: 5. Remove to kettle.

  • Step 12: Add ham;

  • Step 13: Reheat slowly until thoroughly hot.
