Ingredients

The ingredients are:
  • 1 bag (6 ounce) baby spinach
  • 2 cloves garlic, minced
  • 1/2 cup yellow onion, minced
  • 1 tablespoon butter
  • 17 1/2 ounces cooked rice (2 cups cooked)
  • Salt, to taste
  • Pepper
  • 3/4 cup sour cream
  • 1 large egg (beaten)
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 pound salmon (1 fillet, cut into 8 strips and skinned)
  • Cooking spray

How to Make

  • Step 1: Saute spinach, onion, garlic, butter.

  • Step 2: Heat oven to 350.

  • Step 3: Grease a 1 1/2 quart Au gratin dish with cooking spray.

  • Step 4: Mix spinach with rice, salt, pepper.

  • Step 5: In a small bowl, mix sour cream, egg, mustard, 2 tbsp Parmesan, salt, pepper.

  • Step 6: Reserve 2 tbsp of sauce, and mix in the rest with the spinach and rice. Transfer to Au gratin dish.

  • Step 7: Place salmon over spinach mixture, add sauce over salmon, sprinkle with cheese, bake for 25-30 minutes. Let stand 5 minutes before serving.
