Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 pounds potatoes (small new potatoes, washed, patted dry and quartered)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallots
  • 1 teaspoon dried thyme
  • 1 teaspoon minced rosemary
  • 1/8 teaspoon freshly ground nutmeg
  • 1/4 cup balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Place baking rack in lower third of oven.

  • Step 3: Heat olive oil in 12-inch skillet over medium-high heat.

  • Step 4: Add potatoes, garlic and shallots.

  • Step 5: Toss in skillet until well mixed.

  • Step 6: Add thyme, rosemary and nutmeg. Toss well.

  • Step 7: When potatoes are hot, transfer to baking pan and spread in single layer.

  • Step 8: (This part of the recipe can be made several hours ahead of time.)

  • Step 9: Place pan in preheated oven on lower rack.

  • Step 10: Roast potatoes until golden and just tender, about 25 minutes,

  • Step 11: Turning once midway.

  • Step 12: Add vinegar. Toss well.

  • Step 13: Season to taste with salt and pepper.

  • Step 14: Return to oven until sizzling, about 7 minutes.
