Ingredients

The ingredients are:
  • 1 1/2 to 2 pounds shrimp (32 fresh jumbo tiger prawns, cleaned and de-veined with tail on)
  • Salt and pepper to taste
  • FOR THE MARINADE
  • 1/4 cup olive oil
  • 1 teaspoons liquid smoke
  • 2 tablespoons dried oregano
  • 3 cloves garlic, minced
  • 3 lemons (juice of)
  • Lemon zest (from 3 lemons, optional)
  • 2 teaspoons hot pepper flakes
  • 1/2 to 1 teaspoon ground black pepper
  • SPICY DIPPING SAUCE
  • 2 tablespoons Worcestershire sauce (30ml)
  • 1/4 cup horseradish
  • 1 cup ketchup
  • 2 whole lemons (juice of)
  • Tabasco sauce (3 splashes or as to taste)
  • 1 teaspoon celery salt
  • 1 teaspoon ground black pepper

How to Make

  • Step 1: Combine and mix all dipping sauce ingredients in a bowl and place in the fridge.

  • Step 2: Combine all 8 marinade ingredients in a bowl. Place prawns in large sealable bag and pour marinade over. Marinate in fridge for 30 minutes.

  • Step 3: Remove shrimp form marinade and sprinkle with salt, pepper. Let shrimp come to room temperature.

  • Step 4: Preheat grill to 450ºF.

  • Step 5: Place shrimp on grill and cook 2 minutes per side, until pink and firm.

  • Step 6: Remove from grill and serve with dipping sauce.
