Ingredients

The ingredients are:
  • 1 lemon, whole (grated rind & juice of)
  • 1 1/2 pounds boneless skinless chicken breasts (6 breasts)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 tablespoons oil
  • 2 tablespoons brown sugar (soft)
  • 1 lemon, whole (thinly sliced, extra)
  • 1 cup chicken stock

How to Make

  • Step 1: Preheat oven to 190°C Sprinkle the lemon juice over the chicken breasts. Mix the flour, salt and paprika in large plastic bag. Place chicken in the bag and shake the chicken in the flour mixture.

  • Step 2: Heat the oil in a frypan over high heat and fry the chicken to just about brown. Transfer chicken to a baking dish. Sprinkle chicken with the grated lemon rind and soft brown sugar. Cover with slices of lemon and pour over the chicken stock. Cover with foil and bake for 25 – 30 minutes.

  • Step 3: Serve when ready.
