Ingredients

The ingredients are:
  • 1 garlic, clove crushed
  • 1 tablespoon oil
  • 1/4 cup sliced chicken breast
  • 1/2 cup pineapple, sliced
  • 1/2 cup yellow onion, sliced
  • 1/2 whole carrot (pre cooked, and sliced)
  • 1/4 whole cucumber, sliced
  • 1/2 whole tomato, sliced
  • 1 spring onion, chopped
  • 1/2 large green chili pepper (optional)
  • 1/4 cup chicken stock (or water)
  • 1/2 teaspoon tapioca flour (combined with 2 tablespoons water)
  • SAUCE INGREDIENTS
  • 1 tablespoon tomato sauce
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon soy sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon lemon juice (or 1 tablespoon tamarind juice)
  • 1 tablespoon chili sauce

How to Make

  • Step 1: Combine all of the sauce ingredients with the sugar and lime juice and set aside.

  • Step 2: Heat the oil over a high heat in a wok, and when it is hot, add the garlic and onion, and stir for 10 seconds.

  • Step 3: Add the chicken and chicken stock, and stir for 30 seconds.

  • Step 4: Add the remaining ingredients and stir fry for one more minute.

  • Step 5: Add the sauce mixture and stir to combine.

  • Step 6: Add tapioca flour (mixed with the water) and stir to combine again.

  • Step 7: Remove from heat and serve.
