Ingredients

The ingredients are:
  • 8 ounces pork (cooked, chopped)
  • 8 ounces potatoes (thinly sliced)
  • 3/4 cup barbecue sauce
  • 3 ounces mixed vegetables (1/2 cup frozen mixed diced bell pepper, onion, celery and carrot)
  • 1/4 teaspoon liquid smoke
  • Seasoned salt to taste
  • Pepper to taste
  • Freshly grated parmesan cheese, as much as you like

How to Make

  • Step 1: Mix the BBQ sauce with the liquid smoke and set aside.

  • Step 2: Placed the cooked pork in the bottom of a small casserole dish; pour the BBQ sauce mixture over the pork.

  • Step 3: Add the frozen vegetables and layer the potatoes on top.

  • Step 4: Sprinkle with seasoned salt and pepper, cover and place in a preheated 350 degree Fahrenheit oven; cook for 1 1/2 to 2 hours until potatoes are soft.

  • Step 5: Remove cover and sprinkle with freshly grated parmesan cheese; place on top rack of oven and broil until cheese starts to brown, about 3 minutes.
