Ingredients

The ingredients are:
  • 6 cups clear chicken broth
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons light soy sauce
  • 5 tablespoons medium dry sherry
  • 6 green onions, cleaned with one inch of the green part left on
  • 6 fresh 1 inch mushrooms, stems removed, cleaned, thinly sliced
  • 1/2 cup carrots, thinly sliced on the diagonal, slices approximately 1 inch across
  • 6 lemon slices, thinly cut
  • 12 medium size prawns
  • 12 small scallops

How to Make

  • Step 1: Pour your broth into a saucepan and bring to a boil, add mushrooms and carrots simmer 2 minutes

  • Step 2: Add raw prawns and scallops simmer until the prawns are just pink approzimately 3 minutes

  • Step 3: Remove from heat and stir in lemon juice, sherry and soy sauce

  • Step 4: Strain the broth into 6 soup bowls

  • Step 5: Artistically arrange carrots mushrooms, prawns and scallops in each bowl Add a slice of lemon and a green onion on the side Serve
