Ingredients

The ingredients are:
  • 28 ounces dry navy beans (4 cups)
  • 1 (4 ounce) yellow onion, chopped (1 small)
  • 1/4 pound salt pork (diced)
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/2 cup catsup
  • 1 teaspoon dry mustard
  • 2 teaspoon salt (it called for 2 tablespoons, you can add if your dietitian doesn't yell at you)
  • 6 cups water
  • 1 tablespoon Worcestershire sauce
  • 1 cup water (boiling)
  • 1/4 pound salt pork (cut into strips)

How to Make

  • Step 1: Cover beans with water in a saucepan, soak overnight.

  • Step 2: Drain beans, cover with fresh water and simmer slowly.

  • Step 3: When skins of beans start to burst, the beans are sufficiently cooked.

  • Step 4: Drain, then add onion, salt pork, sugar, catsup, mustard, salt, Worcestershire and boiling water.

  • Step 5: Place in greased casserole and top with salt pork strips.

  • Step 6: Bake covered in a 200 degree F oven for 6 to 8 hours.

  • Step 7: Uncover for last hour of cooking.

  • Step 8: Add additional water or stock, if beans become dry.
