Step 1: Cover beans with water in a saucepan, soak overnight.
Step 2: Drain beans, cover with fresh water and simmer slowly.
Step 3: When skins of beans start to burst, the beans are sufficiently cooked.
Step 4: Drain, then add onion, salt pork, sugar, catsup, mustard, salt, Worcestershire and boiling water.
Step 5: Place in greased casserole and top with salt pork strips.
Step 6: Bake covered in a 200 degree F oven for 6 to 8 hours.
Step 7: Uncover for last hour of cooking.
Step 8: Add additional water or stock, if beans become dry.
