  • 3/4 cup oats (quick-cooking)
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter (creamy)
  • 1/2 cup milk
  • 1 cup mashed banana (2 large ripe bananas)
  • 1 large egg
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Heat oven to 375°F. Coat a 12 cup (standard size) muffin tin with nonstick cooking spray.

  • Step 2: Combine first 5 ingredients in large bowl.

  • Step 3: Whisk peanut butter and milk in medium bowl until blended; stir in bananas, egg, oil and vanilla.

  • Step 4: Add to flour mixture; stir just until moistened.

  • Step 5: Spoon into 12 muffin pan cups.

  • Step 6: Bake 18 to 20 min. or until toothpick inserted in centers comes out clean.

  • Step 7: Cool slightly.
