Ingredients

The ingredients are:
  • 1 1/2 to 2 pounds potatoes (4 potatoes, baked, largest you can find)
  • 3/4 cup heavy cream
  • 1 bag (10 ounce) frozen peas and carrots (2 cups ,thawed)
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon chives

How to Make

  • Step 1: Halve just baked potatoes.

  • Step 2: Take out potato pulp, (don't tear the skin) then add to bowl. Add butter and cream

  • Step 3: Whip, add spices, fold in peas and carrots.

  • Step 4: Top with cheese and chives.

  • Step 5: Bake 375 for 35 minutes until hot and cheese is lightly browned.
