Step 1: Halve just baked potatoes.
Step 2: Take out potato pulp, (don't tear the skin) then add to bowl. Add butter and cream
Step 3: Whip, add spices, fold in peas and carrots.
Step 4: Top with cheese and chives.
Step 5: Bake 375 for 35 minutes until hot and cheese is lightly browned.
