Ingredients

The ingredients are:
  • 6 ounces bittersweet chocolate (or semisweet chocolate, chopped)
  • 2 tablespoons butter
  • 1/4 cream of coconut (sweetened, I used half and half)
  • 2 tablespoons rum
  • 2 teaspoons curry powder
  • 1 teaspoon lime peel, grated
  • 3/4 cup whipping cream (chilled)
  • 1 tablespoon powdered sugar
  • 4 bananas (peeled and halved lengthwise)
  • 1 quart ice cream (vanilla)
  • 1 cup pineapple cubes (about 1/2 inch cubes)
  • Coconut, sweetened and flaked, toasted

How to Make

  • Step 1: In a saucepan over low heat stir chocolate and butter together until smooth and then whisk in next four ingredients (cream of coconut - lime peel). Stir sauce over low heat until warm.

  • Step 2: In a bowl whisk cream and powdered sugar together to peaks; chill until ready to use.

  • Step 3: To serve: arrange 2 banana halves in each of 4 long and shallow dishes; add 3 scoops ice cream to each dish. Spoon warm sauce over and then top with pineapple, whipped cream and toasted coconut.
