Ingredients

The ingredients are:
  • 2 cups granulated sugar
  • 15 tablespoons unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 3 tablespoons coffee beans, ground
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup chopped pecan (pieces)
  • 1 package (6 ounce) bittersweet chocolate (1 cup, or semisweet chocolate chips)
  • 6 tablespoons brewed coffee (freshly brewed)
  • Crystallized ginger (30 strips)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Spray a 13 x 9 x 2inch pan with cooking spray

  • Step 2: In a bowl (or top of a double boiler) combine the first 5 ingredients (sugar - salt). Place the bowl over saucepan of simmering water and whisk until butter melts and ingredients are blended. Remove bowl form water and cool to lukewarm. Whisk in eggs and vanilla. Sift flour over and mixture and then fold in along with the pecans.

  • Step 3: Spread mixture in prepared pan. Bake for 25-30 minutes or until tester comes out clean. Let cool in pan.

  • Step 4: In a bowl place chocolate chips. Bring coffee to a simmer and then pour over the chocolate chips; stir until melted. Let stand until cool and begin to thicken (1 hour). Spread over the brownies.

  • Step 5: Cut brownies into 15 squares, top each with 2 ginger strips.
