  • 2 1/4 pounds potatoes, (6 potatoes, peeled and thinly sliced)
  • 1 1/2 pounds tomatoes (4 tomatoes, chopped)
  • 9 ounces carrots (3 carrots, sliced thin)
  • 1/4 cup chopped celery
  • 16 ounces yellow onions, finely chopped (2 onions)
  • 2 garlic cloves, minced
  • 3 tablespoons chopped parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups water
  • 1/4 cup olive oil

How to Make

  • Step 1: Preheat oven to 375°F

  • Step 2: Lay potatoes in the bottom of a greased baking dish.

  • Step 3: Combine tomatoes, carrots, celery, onions, garlic. parsley, salt and pepper, and mix well.

  • Step 4: Spread this mixture over the potatoes.

  • Step 5: Add the water.

  • Step 6: Bake for 45 minutes.

  • Step 7: Pour oil over vegetables.

  • Step 8: Bake 15 minutes more.
