Ingredients

The ingredients are:
  • 1/4 cup olive oil (divided)
  • 2 pounds beef top round (cut in 1/2-inch cubes)
  • 2 pounds potatoes (4 large, peeled and thinly sliced)
  • 2 cups chopped tomatoes
  • 2 whole carrots, grated
  • 1/4 cup chopped celery
  • 1 cup chopped yellow onion
  • 1 green bell pepper, julienned
  • 2 garlic cloves, minced
  • 3 tablespoons chopped parsley
  • 2 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: Heat 3 tablespoons oil in a large skillet.

  • Step 3: Add meat and brown on all sides. Remove and set aside.

  • Step 4: Place potatoes in a greased baking dish large enough to hold all ingredients.

  • Step 5: Spread meat over potatoes.

  • Step 6: Combine tomatoes, carrots, celery, onion, pepper, garlic, parsley, salt and pepper. Spread mixture over meat.

  • Step 7: Pour in broth.

  • Step 8: Cover and bake for 45 minutes.

  • Step 9: Uncover, pour remaining oil over top, and bake 20 minutes more.
