Step 1: In a skillet over medium heat cook the bacon until crisp (5 minutes or so). Transfer to paper towels.
Step 2: In a skillet melt 1 tablespoon butter over medium high heat. Add apple slices; saute for 3-5 minutes. Remove from heat.
Step 3: Spread mustard on cut sides of the bread. Place two cheese pieces on each bottom half; top with 4-5 apple slices and then 3 bacon slices. Top with 2 more cheese slices and then the top bread pieces. Press lightly.
Step 4: Melt 1 tablespoon butter with 1 tablespoon oil in each of 2 skillets over medium heat. Add 2 sandwiches to each skillet;cover and cook until bottom of sandwiches are brown, pressing with a spatula (5 minutes). Turn sandwiches over; cover and cook until brwon and cheese melts (5 minutes).
