The ingredients are:
  • 1 pound ground beef
  • 1/2 medium yellow onion, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup dry quinoa (rinsed and drained)
  • 1/2 teaspoon cumin
  • 1 can (6 ounce) tomato paste
  • 1/4 cup apple cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon brown mustard
  • 2 1/2 cups water
  • 6 ounces bacon (6 slices bacon or turkey bacon, cooked and chopped or crumbled)
  • 1 cup shredded cheddar cheese

How to Make

  • Step 1: Heat a skillet over medium heat. Add the ground beef, onion, salt and pepper, and cook until the meat is browned, breaking up as it cooks. Drain any excess grease.

  • Step 2: Stir in quinoa, then add the cumin, tomato paste, vinegar, Worcestershire sauce, mustard, and water, and stir until combined.

  • Step 3: Cover, bring to a simmer over medium heat, and cook for 20-25 minutes, or until quinoa is tender.

  • Step 4: Top with bacon & cheese, then place under your broiler or in a hot oven for 2-4 minutes, or until cheese is melted. If you don't want to light your oven, you can just cover the skillet and leave it over the hear for a few minute to melt the cheese, but it won't get browned.
