Step 1: Heat a skillet over medium heat. Add the ground beef, onion, salt and pepper, and cook until the meat is browned, breaking up as it cooks. Drain any excess grease.
Step 2: Stir in quinoa, then add the cumin, tomato paste, vinegar, Worcestershire sauce, mustard, and water, and stir until combined.
Step 3: Cover, bring to a simmer over medium heat, and cook for 20-25 minutes, or until quinoa is tender.
Step 4: Top with bacon & cheese, then place under your broiler or in a hot oven for 2-4 minutes, or until cheese is melted. If you don't want to light your oven, you can just cover the skillet and leave it over the hear for a few minute to melt the cheese, but it won't get browned.
